Vuosien varrella olen aina liittänyt Glorian ruoka & viini -lehden jotenkin “parempiin ruokablogeihin”. Liekö tämä sitten johtunut lehden resepteistä vai mistä. Ainakin suuri osa kyseisestä lehdestä blogatuista ruuista on näyttänyt melkoisilta herkuilta. Pääsinpä sitten minäkin viimein kyseisen lehden makuun, kun en pystynyt vastustamaan vuoden ensimmäisen numeron -50% tarjousta.
Kyllähän sieltä mukavan näköisiä reseptejä löytyikin. Ensimmäisenä oli ihan pakko testata New York cheese cakea, jonka resepti oli rasvaisuudessaan aivan vastustamaton. Juustokakuthan ovat olleet yksi tämän blogin kantavista teemoista alusta saakka ja niitä on kymmenkunta tullut blogattuakin. Paistettuja juustokakkuja ei kuitenkaan ole tullut kovin usein tehtyä, joten siinäkin mielessä resepti oli tuoreen oloinen.
Ja millainen juustokakku tämä olikaan! Jos vanhat suosikkini ovat olleet mango-puolukkakakku ja jumalainen juustokakku, niin tämä menee kyllä ihan samaan sarjaan. Maku on hieman rahkatorttumainen, mutta juustojen (ja ranskankerman) rasvaisuus tuntuu täyteläisempänä rakenteena ja jollain lailla hienostuneempana makuna. Vielä kun pohjassa on kunnolla voita ja pinnalla ranskankermakuorrutus, on tulos lähes vertaansa vailla.

200 g digestivekeksejä
100 g voita
1/2 tl kaneliatäyte
3 prk (à 200 g) Philadelphia-juustoa
2 1/2 dl sokeria
3 kananmunaa
1 rkl raastettua sitruunankuorta
2 tl vaniljasokeria
1 prk (200 g) ranskankermaakuorrutus
1 prk (200 g) ranskankermaa
2 rkl sokeria
2 tl sitruunanmehua1. Lämmitä uuni 175 asteeseen.
2. Tee pohja: Murskaa keksit murusiksi. Sulata voi. Sekoita keksimurut, voisula ja kaneli. Painele seos voidellun, irtopohjaisen vuoan pohjalle ja reunoille. Nosta vuoka jääkaappiin täytteen valmistuksen ajaksi.
3. Valmista täyte: Vatkaa tuorejuustoa kulhossa sähkövatkaimella noin 1 minuutti. Sekoita sokeri juuston joukkoon ja jatka vatkaamista hetki. Vatkaa kananmunat seokseen yksitellen. Raasta sitruunankuori. Purista sitruunasta 2 tl mehua talteen kuorrutusta varten. Lisää 1 rkl sitruunankuorta, vaniljasokeri ja ranskankerma täytteeseen.
4. Kaada täyte jääkaapissa jähmettyneen pohjan päälle. Paista kakkua uunin alatasossa noin 45 minuuttia.
5. Katkaise uunista virta ja anna kakun kypsyä jalkilämmössä, uuninluukku hieman raollaan, noin 1 tunti.
6. Anna kakun jäähtyä.
7. Tee kuorrutus: Sekoita ranskankerma, sokeri ja sitruunanmehu keskenään. Levitä kuorrutus kakulle. Peitä kakku kevyesti tuorekelmulla ja nosta jääkaappiin hyytymään vähintään 4 tunniksi.
